Zack Denfield and Cathrine Kramer (artist collective Genomic Gastronomy) in conversation with Anje Poortman (Thuishaven Voedselbos / Toekomstplanter)
Genomic Gastronomy
The Center for Genomic Gastronomy is an artist-led think tank founded in 2010 by Cathrine Kramer (NO) and Zack Denfeld (US). They present their research on organisms and environments manipulated by human food cultures in the form of public lectures, research publications, meals and exhibitions. Since early 2024, they have been developing the Genomic Gastronomy Garden in the former seal enclosure in the Amstelpark.
Anje Poortman is a self-proclaimed food forest ranger of the Thuishaven Voedselbos in the countryside of Zeewolde. When she lost her office job due to the covid-19 pandemic, she turned her hobby into her job: Toekomstplanter. Today she maintains a romantic two-hectare food forest and a second, production-oriented food forest that was planted in November 2021.
